You’ve gotta get your peaches and tomatoes from the farmers market when they’re in season. The grocery store peaches just don’t compare to how juicy and flavorful local grown produce is. So get your ass off the couch(it’s a pandemic, what else do you have to do) and support your local farmers!

Towards the end of summer peaches & tomatoes are in season & full of flavor. Add some burrata cheese to them & you’ve got a classic summer combo.

Burrata means buttered in Italian. This cheese is the creamy, smooth, buttery cousin to mozzarella. It’s mandatory that you try this cheese at least once in your life.

Below I’ve got two easy & quick recipes. One involves no heat, perfect for these hot as hell summer days. The second recipe requires grilling the peaches….which makes them extra sweet & caramelizes the sugar…..hell yes!

Peach, Tomato and Burrata Salad

  • 3 large tomatoes, sliced

  • 3 large peaches, sliced

  • Burrata cheese

  • Fresh basil, ribbons(about 1/4 cup)

  • Balsamic glaze(Trader Joes has a great one)

  • Good quality olive oil

  • Salt & pepper to taste

Instructions:

Slice tomatoes & peaches and lay on a plate. Top with fresh basil, burrata cheese & drizzle with olive oil and balsamic glaze. Add salt & pepper to taste. Serve & eat immediately!

Grilled Peach and Burrata Salad

  • 3 large tomatoes, sliced

  • 3 large peaches, halved

  • 4 cups mixed greens

  • Burrata cheese

  • Fresh basil, ribbons(about 1/4 cup)

  • Balsamic glaze(Trader Joes has a great one)

  • Good quality olive oil

  • Salt & pepper to taste

Instructions:

Add oil to peaches & grill over medium heat for 7-10 minutes(if you don’t have access to an outdoor grill, you can use a grill pan on your stove). Mean while place mixed greens on a platter, add tomatoes. Once peaches are done, place peaches on the mixed greens, top with burrata cheese & drizzle with olive oil & balsamic glaze. Season with salt & pepper. Serve & enjoy!
