Roasted Goddess Bowl

Ingredients:

  • 2 cups cherry tomatoes

  • 1 cup edamame, shelled

  • 2 cups garbanzo beans, cooked

  • 2 cups sweet potato, cubed

  • 1 cup cauliflower, chopped

  • ¼ cup avocado oil

  • 2 tbsp chili powder

  • Salt and pepper, to taste

  • 3 cups brown rice, cooked(or grain of your choice)

  • 1 cup purple cabbage, chopped

  • ½ cup @annieshomegrown Goddess Dressing

  • Fresh lemon & parsley(optional)

Instructions:

Place cherry tomatoes and edamame on one baking sheet, and garbanzo beans, sweet potato and cauliflower on another. Drizzle with avocado oil, season with chili powder, and salt and pepper. Mix thoroughly. Place veggies in the oven at 450F, bake for 15 minutes, remove from oven and stir. Return to oven for another 15 minutes, or until golden. Tomatoes and edamame will finish first. Separate brown rice(or grain of your choice) into serving bowls, top with roasted items, purple cabbage and @annieshomegrown Goddess Dressing. Serve with fresh lemon, parsley, and enjoy! This recipe will last in the fridge for 4-5 days in an airtight container. I’ve been using it as my go-to for dinners and lunches on busy weeks! LVL Protein Balls

1 cup cashew butter*
1/4 cup pumpkin seeds(ground)
1/4 cup flax seeds
1/4 cup chia seeds(ground)
1/4 cup chocolate chips(optional)
1/4 cup dried tart cherries(no sugar added)
maple syrup(optional)
1 tsp vanilla extract
1/2 tsp Real Salt

Mix all ingredients into a large bowl(I just use my hands and get messy with it, if you have kids this is really fun for them!). Once everything is mixed well, roll into small balls. Store in an airtight container in the freezer or fridge! 

*you could use almond butter or peanut butter if you prefer(if you're on a budget peanut butter is the cheapest).
